Weapons Seminar!

Kyoshi Jay Haynes will be teaching Sushi no kun sho, a long weapons kata on Saturday, November 22nd from 1pm - 2:30pm at the Family Karate Center on 3617 Betty Drive, 80917.

This bo kata does amazingly well in competitions and it a very fun kata to learn, especially when taught by such a qualified and dynamic instructor as Kyoshi Haynes.

Please let Mrs. Cupples know if you are interested in this seminar as you need approval from me before you sign up. Normally this seminar is only open to brown belts, but Kyoshi is making an exception and allowing me to chose students who are ready to handle a bo staff to join him in this seminar.

Family rates are available: $20, $15, $10, $5 for first, second, third and fourth family members.

Talk to Mrs. Cupples now as space is limited. Kyoshi will have bos available to borrow for the seminar.

Lemon Squares Recipe!

Here it is, the Lemon Square Recipe, as promised:

Lemon Squares

Bottom Crust
1 cup all-purpose flour
1/2 cup butter, softened
1/4 cup powdered sugar

Filling
1 cup granulated sugar
2 teaspoons grated lemon peel
2 tablespoons fresh lemon juice
1/2 teaspoon baking powder
1/4 teaspoon salt
2 eggs

Heat oven to 350 degrees. Mix all ingredients for crust (flour, butter and powdered sugar). Mix will resemble small peas like for pie crust. Press this mixture into an ungreased square 8x8 or 9x9 pan and build the sides up 1/2 inch around the pan. This way the lemon filling does not touch the sides. Bake for 20 minutes.

When there are three minutes left in cooking time for the crust begin to beat all filling ingredients until fluffy, about 3 minutes. Pour over the hot crust and bake for 20-25 minutes until slightly browned and when no indentation remains when you lightly touch the center.

Cool and then sprinkle with powdered sugar. Cut into 1 1/2 inch squares and ENJOY!

This is from my Betty Crocker Cookbook that I have had for over 15 years. Leave me a note if you give this a try and let me know if you like it :)
